Why Pistachio Is My Favorite Cake

Cakes have been part of almost everything. Birthdays, farewells, quiet celebrations, and moments we never planned for. They’ve stood in for words when we didn’t know what to say. We’ve grown up with them. We’ve seen them dressed in layers of frosting, stacked tall, filled with creams and colors.
But for me, finding the right cake has always been a little tricky. I don’t lean toward the overly sweet ones. I never quite reach for the dry or plain ones either.
Somewhere in between, I’ve been waiting.
And then I tried the pistachio cake at Pumpernickel.
The pistachio cake at pumpernickel is a soft vibrant green, a color pleasant to the eyes . I already liked pistachios, so I gave it a try.
The texture was smooth and rich, not too dense but full. The flavor was calm, with the real taste of fresh pistachios woven through each bite. There was something steady about it. Something that held.
It reminded me of cheesecake, but lighter. More grounded. I didn’t rush through it. I took my time.
And still, I hated reaching the last spoon.
The pistachio cake at pumpernickel is one of my favorites, because it makes me pause and savor it. It's my perfect slice of cake!
